This recipe for New Year Pork and Sausage Rolls is from the Preston County Homemakers Mountain Heritage Recipes cookbook, 1974. Annabelle Urbas Mayor’s recipe (Arthurdale Homesteader).
Ingredients
- 1 1/2 lb. sausage or ground pork
- 1/2 lb. ground beef
- 1 cup uncooked rice
- 1 medium cabbage
- 1 jar of sauerkraut
- 1 medium onion – chopped
- 1 can red sauce of your choice!
- salt and pepper to taste
Directions
- Peel leaves off cabbage
- Boil 1 quart of water
- Add cabbage leaves to boiling water, boil until soft
- While cabbage boils – place kraut in the bottom of a pot
- Mix sausage & ground beef together
- Chop onion – add to meat mixture
- Add rice to meat and onions – mix well
- Once cabbage is soft, remove from boiling water – let cool!
- Once cooled, take one leaf and fill with a heaping scoop of meat
- Roll tight – place on top of kraut
- Once all leaves are rolled, pour enough water over cabbage rolls (2/3 covered)
- Add red sauce in with the water over the rolls
- Cover, bring the pot to a boil and then “slow boil” for 1 hr. and 30 mins.
- Serve & Enjoy!
